Curry Shrimp Lettuce Wraps with Garlic Aioli Recipe

Ingredients

  • 7 pieces romaine lettuce, washed and dried

  • 21 wild caught shrimps, peeled

  • 1/2 red bell pepper, finely diced

  • 1 tbsp parsley, chopped

  • 2 tsp avocado oil

  • 1 tsp garlic, minced

  • 1/4 tsp curry powder

  • 1/4 tsp turmeric powder

  • 1/4 tsp salt

  • 1/4 tsp black pepper

Garlic Aioli

  • 1/4 Follow Your Heart Vegan Mayo

  • Juice of 1/3 lemon

  • 1/2 tsp garlic, minced

  • Sprinkle of paprika powder

Instructions

  1. In a skillet set over medium heat, saute garlic in avocado oil. Toss in shrimps and season with curry, turmeric powder, salt and pepper. Fry until cooked or pink through.

  2. In a small bowl whisk together vegan mayo, minced garlic, lemon juice, and paprika powder.

  3. Add shrimp to lettuce wraps, top off with chopped bell peppers, parsley and garlic aioli. Serve and enjoy!
