Hi Everyone,  

Hope you’re doing well!  I had a great weekend seeing family and settling in Maddie. Our relatives are over from my brother’s wedding so it’s been a busier time than usual but always lovely to see them. Our adopted dog Maddie is also adjusting well.  This weekend we took her to the groomer’s which was a bit frightening for her to be in a new environment being bathed by a complete stranger without her family there but she managed.  Not going to lie, we were a nervous wreck and couldn’t stop thinking about her until she was out of there.  But hopefully in time, she gets used to the drill. 

This weekend I developed a very Easy Apple Galette recipe that is vegetarian.  It’s delicious, warm and way easier to make than apple pie in my opinion.  The puff pastry is store-bought which makes this recipe easy!  For this recipe, I’m using No Name Naturally Imperfect Apples, President’s Choice Puff Pastry, Nutiva Organic Coconut Oil, Simply Organic Cinnamon & Vanilla Extract, Earth’s Own Almond Milk, corn starch, Wholesome Sweet Brown Sugar and Icing Sugar.

APPLE GALETTE RECIPE (VEGETARIAN)

SERVES 12 SMALL SLICES | PREP TIME 25 MINS |  BAKE TIME 40 MINS

INGREDIENTS

Filling:

  • 10 McIntosh Apples, unpeeled and diced

  • 2 tbsp organic coconut oil

  • 1 tsp organic cinnamon powder

  • 1 tsp organic vanilla extract

  • ¼ cup brown sugar

  • 2 tbsp almond milk

  • ½ tbsp. corn starch

 

  • 2 sheets puff pastry

  • Dusting of icing sugar

Required: 1 large lined baking sheet 

INSTRUCTIONS

  1. Peel and dice apples. In a large non-stick pan set on medium heat, add coconut oil. Once the oil is hot, add in apples.

  2. Add in cinnamon powder, vanilla extract, brown sugar and stir.  Pour in almond milk and add corn starch. Stir until well combined and sauce is thickened. Set aside to cool.

  3. Preheat oven to 400 degrees F. Lay out puff pastry sheets onto two lined baking sheet. Divide filling into two equal parts. Pour one part into the center of one sheet. Roll the edges of the pastry upwards and fold over until you have a galette. Repeat process for the remaining ingredients. Bake for 40 minutes until golden brown.

  4. Dust over with icing sugar. Serve warm and enjoy!
