Asian Tofu Veggie Stir Fry Recipe (Vegan)

Serves 3-4

INGREDIENTS

  • 210 g of Soyganic Smoked Tofu, diced

  • 1 cup organic carrots, sliced

  • 2 organic celery stalks, sliced

  • 1 green zucchini, sliced

  • 1 yellow zucchini, sliced

  • 2 tsp garlic, minced

  • 3 slices of ginger with skin on

  • 1 tsp sesame oil

  • 1/4 cup water

Corn Starch Slurry:

  • 1 tbsp corn starch

  • 1 tbsp organic soy sauce

  • 1/2 cup water

INSTRUCTIONS

  1. In a small bowl mix together, corn starch, soy sauce and water. The sauce will thicken at the bottom which is normal.

  2. In a large wok set on medium high heat, fry garlic in sesame oil until fragrant. Quickly add in tofu and fry until crispy golden.

  3. Next add in carrots, celery and zucchini. Add 1/4 cup of water and fry until veggies have softened.

  4. Lastly, lower heat to lowest setting. Give your corn starch slurry a mix and pour evenly over the stir fry. Quickly stir so the slurry does not coagulate. Serve with some rice and enjoy!
