Hi Everyone,

Today I’m sharing a Double Chocolate Oat Cookies with you. My husband was REALLY craving cookies so I decided to make him these healthy oat flour cookies that are completely vegan! They come out so soft and moist and they’re SO EASY to make. They also only take 11 minutes to bake which is impressive in my books.

DOUBLE CHOCOLATE OAT COOKIES RECIPE (Vegan)

Serves 11-14 cookies |  Ready in 25 minutes

INGREDIENTS

  • 3 tsp cocoa powder

  • 1 cup oat flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup coconut sugar

  • 1/3 cup vegan chocolate chunks

  • 3  tbsp organic almond milk

  • 2 tbsp organic coconut oil, melted

  • 1 tsp pure vanilla extract

Required: Baking sheet with reusable liner. I use Unstick liners that can be used up to 2000 times before hitting the landfill! They clean easy!

INSTRUCTIONS

  1. Preheat oven to 325 degrees F. Mix all your dry ingredients in a large mixing bowl.  Then add in your wet ingredients. Mix until well combined. It will look dry at first but keep mixing until you reach the consistency of cookie dough. You may add more milk if needed.

  2. Scoop 2 tbsp worth of cookie into your hand and roll into a ball. Place onto lined baking sheet and flatted with a spatula.  Bake for 11 minutes.
