Egg Potato Bake Recipe
Egg Potato Bake Recipe (Vegetarian)
Serves 2 large portions or 4 small portions
Ready in 45 mins
2-4 free range organic eggs, as many as desired
1 red bell pepper, finely diced
1/4 cup green onions
1 avocado, smashed
1 tbsp vegan mayo
Pinch of sea salt
Juice of 1/2 lime
8-9 organic yellow russet potatoes, peeled and diced
1/2 tsp sea salt
1/4 tsp black pepper
1/2 tsp paprika powder
1/2 tsp garlic powder
1/4 tsp onion powder
2 tbsp avocado oil
Required: Oven-safe skillet
Preheat oven to 450 degrees F. Peel and dice organic yellow russet potatoes. Add them to your oven-safe skillet. Season potatoes with spices and oil massaging them into the taters. Bake for 20 minutes.
Safely remove the hot skillet from the oven. Crack 2-4 eggs into the skillet. Sprinkle diced bell peppers over top. Bake for 8-10 minutes until eggs are cooked.
In a small bowl, smash avocado. Mix in with vegan mayo, lime juice and sea salt.
Garnish with green onions and add avocado dip. Serve hot and enjoy!
