Egg Potato Bake Recipe (Vegetarian)

Serves 2 large portions or 4 small portions
Ready in 45 mins

Ingredients

  • 2-4 free range organic eggs, as many as desired

  • 1 red bell pepper, finely diced

  • 1/4 cup green onions

Avocado Dip:

  • 1 avocado, smashed

  • 1 tbsp vegan mayo

  • Pinch of sea salt

  • Juice of 1/2 lime

Taters:

  • 8-9 organic yellow russet potatoes, peeled and diced

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • 1/2 tsp paprika powder

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • 2 tbsp avocado oil

Required: Oven-safe skillet

Instructions

  1. Preheat oven to 450 degrees F. Peel and dice organic yellow russet potatoes. Add them to your oven-safe skillet. Season potatoes with spices and oil massaging them into the taters. Bake for 20 minutes.

  2. Safely remove the hot skillet from the oven. Crack 2-4 eggs into the skillet. Sprinkle diced bell peppers over top. Bake for 8-10 minutes until eggs are cooked.

  3. In a small bowl, smash avocado. Mix in with vegan mayo, lime juice and sea salt.

  4. Garnish with green onions and add avocado dip. Serve hot and enjoy!
