Fish n' Chips Sheet Pan Meal Recipe

Ingredients

Salmon:

  • 2 wild caught salmon filets

  • salt and pepper

  • 1 tsp olive oil

  • lemon juice

Chips:

  • 8 organic medium yellow potatoes, sliced into wedges

  • 1 tbsp olive oil

  • salt

Bok Choy:

  • 3 bok choy, sliced into half

  • 1 tsp olive oil

  • salt and pepper

Required: 1-2 large lined baking sheet

Instructions

  1. Preheat oven to 425 degrees F.

  2. Slice potatoes into wedges. Spread evenly on baking sheet.

  3. Slice bok choy into half and lay on baking sheet. Followed by salmon filet, skin side down.

  4. On potato wedges, salmon filets, and bok choy, season with olive oil, salt and pepper. Massage oil, salt and pepper into each ingredient. Make sure wedges are evenly spread. You may need to use two sheet pans.

  5. Bake salmon and bok choy for 14 minutes and remove off baking sheet to set aside and keep warm. Bake chips for 25-27 minutes until golden crispy, flipping at 14 minute mark. Squeeze lemon juice over salmon. Enjoy!
