Hi Everyone,

Today I am sharing a twist on a classic potato dish – Garlic Chive Mashed Potatoes.  The trick to infusing these mashed potatoes with the right amount of garlic flavour is by sautéing the minced garlic in dairy-free butter!  Garlic can have a strong aftertaste when consumed raw so by sautéing them first, we are removing that strong flavour. The chives add a wonderful scent and taste to this recipe without overpowering the garlic.  This recipe also only take 45 minutes to make and is perfect for the colder season! 

For this recipe, I am using EarthFresh Organic Yellow Potatoes: Best for Mashing, organic garlic, fresh chives, vegan butter and plain almond milk. EarthFresh potatoes are delicious and found at most Canadian grocers. I usually find it challenging to locate organic potatoes at the grocers so it is great to find an accessible brand.

GARLIC CHIVE MASHED POTATOES RECIPE (VEGAN)

SERVES 5-6 |  PREP TIME: 15 MINS |  COOK TIME 30 MINS

INGREDIENTS

  • 8 yellow organic EarthFresh potatoes: best for Mashing, peeled and sliced at 1 cm thick

  • 3 tbsp. vegan butter

  • 1 cup plain almond milk

  • 8-9 garlic cloves, minced

  • ¼ cup fresh chives finely chopped

  • 1.5 tsp salt

 INSTRUCTIONS

  1. In a large pot with boiling water, add sliced potatoes and lower heat to a medium for a rolling boil.  Do not cover with a lid.  Boil for 12 minutes or until you can easily poke a fork through. Strain the potatoes in a colander and set aside.

  2. In the same pot set on low heat, add 3 tbsp. of vegan butter and minced garlic. Fry until fragrant and soft.  Then add potatoes back into the pot along with almond milk and mash the potatoes. 

  3. Remove off heat, then add chopped chives and mix until well combined.  Season with salt.  Serve immediately and enjoy!

Step 1

Peel the potatoes.

Slice potatoes horizontally at 1 cm thick.

Boil sliced potatoes in water in a rolling boiling for 12 minutes or until a fork can poke through easily.

Meanwhile, mince garlic cloves and set aside.

Finely chop fresh chives and set aside.

Strain potatoes in a colander and set aside.

In the same pot used to boil the potatoes with heat on low, add 3 tbsp of vegan butter.

Add minced garlic.

Add strained potatoes and mash them with the garlic and butter.

Add 1 cup of plain almond milk.

Mix in the chopped chives and season with salt. Serve and enjoy!
