Hi Everyone,

Hope you’re doing well! I have been OBSESSED with oatmeal cookies. I feel like I’m having one everyday.  Oatmeal cookies are the best because they’re possess some added health benefits with the fibrous oatmeal.  But I decided to add my own twist to the classic soft chewy oatmeal cookie by adding hemp hearts/seeds! Hemp seeds contain a lot of protein.  In fact 1 tbsp of hemp seeds contains 13.54 grams of protein!  This recipe is also dairy-free, vegan and egg-less!

For this delicious and quick cookie recipe (takes 12 minutes to bake), I am using Bob’s Red Mill Unbleached All Purpose Flour and Quick-Cooking Oats, MadeGood vegan semi-sweet dark chocolate chips, Earth Balance vegan butter, Manitoba Harvest Hemp Hearts among several other ingredients.

OATMEAL HEMP CHOCOLATE COOKIE RECIPE (VEGAN)

YIELDS 18 COOKIES |  READY IN 46 MINS

ADAPTED FROM GENIUS KITCHEN

INGREDIENTS

  • 1/2 cup vegan butter, room temperature

  • 1/2 cup brown sugar

  • 1 tsp vanilla extract

  • 3/4 cup unbleached all-purpose flour

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 1/4 cup boiling water (feel free to add more water 1 tsp at a time to get the right cookie dough consistency)

  • 1 cup quick-cooking oats

  • 3/4 cup semi-sweet vegan chocolate chips

  • 1 - 2 tbsp hemp seeds

Required: Lined baking sheet

INSTRUCTIONS

  1. Beat butter, sugar and vanilla until light and fluffy.  Add flour and salt and mix until well combined.

  2. Dissolve baking soda in boiling water and add to the mixture.  Stir in rolled oats, chocolate chips and hemp seeds.

  3. Taking about 1 tbsp of cookie dough in your hand, roll it into a ball and add to lined baking sheet.  Flatten the dough ball with hand into a cookie shape.  Repeat this process.  Bake at 350 degrees F for 12 minutes max (do not overcook).
