This protein blondie recipe is super easy to make with simple ingredients. It's a fantastic dessert to sneak in some protein. I love making this because the ingredients are minimal and it comes together with little effort.
It's a great dessert or snack idea that you can pack for the office or on-the-go. I recommend using a protein powder that you enjoy and make it's chocolate or coffee flavored.
I created this recipe because I was looking for a way to sneak in some protein powder into my daily snack at work. Since I love blondies, I thought this was a perfect way and that's how this recipe was developed!
Ingredients

Wet Ingredients:
- Coconut oil: melted
- Large eggs: room temperature ideally
- Vanilla Extract
- Milk: or substitute with oat milk, soy milk or nut milk
Dry Ingredients:
- All-purpose flour: or substitute with a gluten-free oat flour if you're gluten-free
- Chocolate or Coffee Protein Powder: make sure it's one you enjoy in a smoothie that isn't too chalky tasting. I like using Nuzest.
- Baking powder
- Cane sugar: or coconut sugar or brown sugar
- Salt
- Mini chocolate chips
How to make Protein Chocolate Chip Blondie
- Preheat the oven to 300 degrees F. Grease a 9-inch square pan with some coconut oil or line it with parchment paper.
- In a large bowl, combine wet ingredients.
- In another large bowl, combine dry ingredients except for the chocolate chips. Pour the dry ingredients into the wet ingredients. Stir in the chocolate chips last.
- Pour blondie batter into the square pan and evenly spread with a spatula so it's flat. Bake for 12-15 minutes until a wooden toothpick inserted in the middle comes out clean.
- Allow it to cool down completely before slicing into squares to serve.
Storage
Leftovers will last up to 4 days stored in an airtight container in the refrigerator or at room temperature.
Expert Tips
- Make sure to use a protein powder that isn't chalky tasting and one that you love to drink! For best taste, use a chocolate or coffee flavored one.
- Bring the eggs to room temperature if they're chilled. You can easily do this by soaking them in warm water until the egg shell is not cold to touch.
- Make sure to separate wet from dry ingredients first before mixing altogether for an even distribution of ingredients.
- Use the mini chocolate chips as the regular sized ones are too big for this size of a blondie.
