What is Earl Grey Chia Pudding?
Earl Grey Chia Pudding is a tasty pudding made of chia seeds soaked in milk packed with that iconic earl grey tea flavor. The earl grey flavor is so delicious and fragrant. Earl Grey tea is made of black tea leaves that are flavored with bergamot oil. It has a very floral and citrusy taste thanks to the oil from the bergamot orange peels. If you've never tried earl grey before, it's absolutely delicious as a tea on its own and it's actually one of my favorite teas. Lady Grey tea is also very similar but the main difference is it contains lemon and orange peel giving it a more softer taste. You can use lady grey tea for this recipe as well if you wish!
I love experimenting with this earl grey tea flavor as it's so versatile and works well in many recipes like in desserts, pancakes, and other puddings. The key to infusing this flavor into the pudding is by steeping it in your milk for a bit longer than you would in a normal tea. This extracts the tea flavor with maximum potency giving you that wonderful flavor! This chia pudding serves well for breakfast, as a snack or even for dessert.

How to Make Earl Grey Chia Pudding
- First in a small pot filled with milk of choice and bring to medium heat on the stovetop. Add the leaves in. Let this steep for 5 minutes until the milk turns slightly brown. Remove off heat and strain the milk tea through a fine mesh tea strainer to remove the leaves. Transfer the liquid to a container and cool in the fridge for 10 minutes.
- Once the milk tea has cooled, stir in chia seeds, maple syrup and vanilla extract until well combined. Allow this to soak for 10 minutes and then stir again to break up any clumps.
- Seal the container and store in the fridge overnight or for at least 3-4 hours. Serve with suggested toppings and enjoy!
Storage
Leftover chia pudding will last up to 4 days stored in an airtight container in the fridge.
Expert Tips
- Mix chia pudding 10 minutes after the first mix to break up any chia pudding clumps. This will ensure a smoother pudding.
- Soak overnight for best results. The chia seeds require some time to expand in the milk.
