Hi Everyone!

The weather is getting hot hot hot!  So I decided to come up with a cooling but delicious smoothie recipe that also provide a crap load of fiber (pun intended....)

This Fruit Medley Oat Smoothie contains rolled oats, flax seeds, banana, almond milk and frozen Fruit Medley by Europe's Best.  Their frozen fruit packages come in handy when my husband and I are short for time and need frozen fruits ASAP.  Usually I will freeze my own organic fruit in those black and clear takeaway containers that restaurants give out and I can't bear to throw out. (Did you know that some recycling facilities are unable to recycle black plastic? Which begs the question of why these companies can't just make 100% clear takeaway containers? My guess comes down to cost-cutting reasons over prioritizing the environment.  So if you can find any use for them, please do!)  This Fruit Medley mix contains honey dew, grape, strawberry, apple, and pineapple and can be found at most Canadian grocers.

For this recipe, I'm also using So Fresh Vanilla Almond Milk and Bob's Red Mill Organic Rolled Oats, Made Good Chocolate Banana Granola Mini Balls, all of which can be found at most Canadian grocers.

FRUIT MEDLEY OAT SMOOTHIE (VEGAN) RECIPE

SERVES 1 |  PREP TIME & BLENDING TIME: 15 MINS

INGREDIENTS

SMOOTHIE:

1 banana, peeled
2 cups frozen Fruit Medley mix (strawberries, apples, honeydew, grapes, pineapples)
1 cup vanilla almond milk
1 tbsp flax seeds
3 tbsp organic rolled oats

TOPPINGS:

4 chocolate banana granola mini balls
4 raspberries, washed
2 tbsp dark chocolate chips
1 tbsp vanilla almond milk

Required: Blender, pot, and heat proof bowl that can fit into the pot

INSTRUCTIONS

  1. In your blender, blend all the smoothie ingredients: banana, frozen fruit, almond milk, flax seeds, and rolled oats.  Blend until smooth.  Pour smoothie into a tall glass.
  2. In a pot with 2 cups of water, set it on high heat. In a bowl, pour your dark chocolate chips and 1 tbsp of almond milk. Let it melt and stir with a spatula.  Once melted, remove pot off heat.
  3. Time to assemble smoothie: layer on raspberries and granola minis. Drizzle the melted chocolate over top using a fork.  Serve immediately and enjoy!
