Hi Everyone,

Today I’m sharing a sesame peach avocado salad with lemon dressing recipe! This is a vegan recipe that is nourishing, satisfying, and delicious. It’s also quick to make in under 15 minutes.

Since peaches are in season, I have been eating them non-stop! I’ve been trying to incorporate them into my recipes and dishes. Eating seasonally is one way to live a sustainable lifestyle. By eating seasonally we are following natures provision of fruits and vegetables. We are also incorporating more diverse foods into our diets, thus introducing a larger variety of vitamins and minerals into our bodies. Therefore eating seasonally benefits both the planet and humankind.

Sesame Peach Avocado Salad with Lemon Dressing Recipe (Vegan)

Serves 4
Ready in 15 minutes

Ingredients

Salad:

  • 6 ripened peaches, sliced into wedges

  • 1 head romaine lettuce, chopped

  • 4 ripened avocados, sliced

  • 2 Macintosh apples, sliced

  • 1/4 cup almonds, chopped

  • 1/4 cup pumpkin seeds

  • 1 tsp sesame seeds

Lemon Dressing Recipe:

  • Juice of 2 lemons

  • 4 tbsp maple syrup

  • 4 tbsp avocado oil

  • 1/4 tsp minced garlic

  • Salt and Pepper to taste

Instructions

  1. Assemble your salad using the ingredients above.

  2. In a mason jar, whisk together your ingredients for your dressing until smooth. Pour over salad and serve.
