Vegan Mac n' Cheese Recipe

Serves 4
Ready in 30 minutes or less

Ingredients

  • 500 grams dried sea shell pasta

  • 2 crowns broccoli florets

  • 1/2 tbsp garlic, minced

  • 2 tbsp vegan butter

“Cheese” Sauce:

  • 2 cups raw cashews

  • 2 1/2 cups hot boiling water

  • Juice of 1/2 lemon

  • 3 tbsp nutritional yeast

  • 1 tsp salt

Required: Blender

Instructions

  1. Boil pasta according to packet instructions. Reserve 1/4 hot pasta water. Strain and set aside.

  2. In another pot, boil and cook broccoli florets. Strain and set aside.

  3. Meanwhile, in a blender, add your ingredients to make cheese sauce. Blend until very smooth.

  4. In non-stick pot, sauteed garlic in vegan butter. Add pasta and stir in cheese sauce. (If the sauce is too thick, you may add more hot water to loosen the sauce). Then toss in cooked broccoli florets. Serve hot and enjoy!
